Strawberry Cupcakes with Cream Cheese Filling


This year for my husband birthday, he requested my strawberry cake. (Click here for strawberry cake recipe) I was more then happy to make it.


I like making three tier cakes for birthdays. A regular box mix makes two tiers. I doubled it in order to make three. Which would leave me with half a mixture of cake batter. This could make 12 cupcakes. My husband had told me the week prior he ate a cream cheese filled cupcake that was delicious. I decided to take the 12 cupcakes can fill them with cream cheese as surprise.


As it turns out, cream cheese icing taste amazing but do to its texture it's going to give you a thinner layer of icing then other icing. By filling the center of the cupcake with the icing, it giving you more of the delicious icing.




Let's get Baking


Cupcake Mix:

  • 1 Box Strawberry Cake Mix ( Click here for exact cake mix I used)

  • 1 Cup Water

  • 3 Eggs

  • A little over 1/2 Cup Vegetable Oil


Preheat the oven to 350°. Mix cake mix, water, eggs, and vegetable oil. Using a mixer, mix for about 2 minutes. Fill cupcake tins with liners. This will make 24 cupcakes. Bake about 18 minutes.


Icing/filling:

  • 8 Oz Cream Cheese

  • 1/2 Cup Butter

  • 2 Cup Powdered Sugar

  • About 2 Tsp Vanilla


Leave cream cheese out to soften. Melt butter, and add powdered sugar, cream cheese, and vanilla. Mix until smooth.


Once your cupcakes have cooled, use a small tool to remove the center part of the cupcake, go only halfway down. Fill with icing, replace removed center. Top cupcake with icing.
