Strawberry Cake 🍓



Strawberry cake with cream cheese icing.




Personally, I’m not a fan of cake. I don’t prefer the texture. Most cakes are dry and just unappealing to me. This cake, however, is a different story. It’s moist and the cream cheese icing is delicious. This is one of the few cakes I enjoy. The best part is that it’s easy to make. I use a box mix but with one little change, it tastes homemade. I made a mistake while making this cake one day and it was a good mistake. My husband said it tasted the best it ever had tasted. I sent it to a funeral dinner and received a text asking if I shared my recipe. That might have been the best compliment I have ever received on a dessert.


Ingredients


Cake


Duncan Hines Perfectly Moist Strawberry Supreme Cake Mix- This is the mix I have used every time I have made this cake. I don't know if another mix will work as well.

Water- Use cold water or room temperature. If you use hot water it can cause your eggs to begin to cook before you bake them. At least that is what I have always been told.

Eggs- Sometimes I use fresh eggs but this time I used store-bought. As long as they are large eggs similar in size it doesn't matter.

Vegetable Oil- This is where my good mistake took place. It causes for either 1/3 cup of vegetable oil, but I put in a little over 1/2 cup. I was pouring the oil looking down at my oil instead of looking at it at eye level. I know it's a rookie mistake but I was holding a baby and couldn't bend over at the time. It worked out well for me.


Icing


This icing is so good. One of the best icing ever. However, I think it take better with a flavored cake. I made it with a plain yellow cake before and the icing was too much for the plain taste of the cake.


Cream Cheese- I use great value cream cheese from Wal-Mart. I don't think a better brand would make much of a difference.

Butter- I use margarine not real butter for most of my recipes. It does make a difference, if you baking something it requires a longer cook time. It might cause your icing to not be set up the same.

Powdered Sugar- Confectioners powdered sugar. I don't sift my sugar before using it. But it would help with lumps.

Vanilla - I got this recipe from my mom who is a wonderful cook. She has been cooking for many years. Sometimes her recipes do not come with exact measurements. This is one of those times. The longer I cook and the more recipes, the more I do the same thing. I just do a splash of vanilla. It's about two teaspoons.






Let's get Baking


Cake:

  • 1 Box Duncan Hines Perfectly Moist Strawberry Supreme Cake Mix

  • 1 Cup Water

  • 3 Eggs

  • A little over 1/2 Cup Vegetable Oil


Preheat the oven to 350°. Mix cake mix, water, eggs, and vegetable oil. Using a mixer, mix for about 2 minutes. I am using two 9-inch pans. Bake for about 23 minutes.


Icing:

  • 8 Oz Cream Cheese

  • 1/2 Cup Butter

  • 2 Cup Powdered Sugar

  • About 2 Tsp Vanilla


Leave cream cheese out to soften. Melt butter, and add powdered sugar, cream cheese, and vanilla. Mix until smooth.


If you are making a layering cake, use plenty of icing in between your layers. I always have a little icing left at the end.
