Week of Meals

I did it again and recorded another week of meals. I love getting new ideas on what to have for dinner. I often get into a rut and cook the same meals over and over. I hope this gives you ideas on what to have for your next meal.


Please note: On most of my recipes, I do not measure. The measurements I give you are estimates. Change things around to your taste. Enjoy!



Chicken Enchiladas

First up we have chicken enchiladas. A simple and easy meal for any weeknight. If you're in a rush in the afternoons, you can do your meat in the crockpot. This leaves you only having to assemble the shells and melt the cheese in the afternoon.


2 Boneless Skinless Chicken Breasts (cubed)

Salt and Pepper to taste

1/2 Bell Pepper

1/2 Onion

Cilantro

1/4 Cup Taco Seasoning

3 Tbsp Butter

1 Can Enchiladas sauce

Tortillas Shells (I use Carb Balance for a lower carb option)

Fiesta Blend Cheese


I start by cooking my chicken seasoning with salt and pepper. Once my chicken is 80% cooked I add in my bell pepper, onion, cilantro, taco seasoning, and butter. Once the chicken has completely cooked and the pepper and onions have softened, I add in a splash of enchiladas sauce. Next, I place the meat into a tortilla shell and tightly wrap it. I place the wrapped tortillas shell into a casserole dish. I cover the tortillas with the remaining enchiladas sauce. I then top it with cheese and place it in the oven for about 7 minutes (or until the cheese melts) at 350°.


Meatloaf

This recipe I found on Pinterest. It's from the Insanely Good food blog click here for the original recipe. This is not my recipe I did not create it, I'm only sharing what I made. This is their recipe listed below for your convenience.


INGREDIENTS

2 pounds lean ground beef

1 small finely diced onion

1/2 cup finely diced bell pepper (optional)

1 1/2 sleeves of crushed Ritz crackers (48 crackers total)

4 oz. shredded sharp cheddar or Colby cheese

3 eggs

1/2 cup milk

1 tsp. salt

1/4 tsp. black pepper

For the topping:

1/2 to 3/4 cup of ketchup

2 tbsp. brown sugar

1 tsp. mustard


Preheat oven to 350 degrees Fahrenheit.

In a small bowl, combine the ketchup, brown sugar, and mustard. Place to the side. This will be used later as the topping.

In a large bowl, combine the eggs, crushed Ritz crackers, cheese, milk, onion, bell pepper, salt, and black pepper. Mix well.

Add in the ground beef. Mix well just to combine. Do not over-mix.

Form into a loaf and place inside a baking pan or baking sheet lined with foil or parchment paper.

Bake at 350 degrees Fahrenheit for 30 minutes.

Remove from the oven and spread the topping over the meatloaf.

Bake for an additional 30 to 40 minutes or until the center is 160 degrees Fahrenheit.



Pork Chop with Sides

Pork Chops (I'm using Pork Center Cut Loin Chops Boneless, 0.9 - 2.01 lb )

Salt and pepper to taste

Onion Powder

McCormick Smokehouse Maple Seasoning

Butter

Garlic

Honey


I seasoned the pork chops with Salt and pepper, Onion Powder, and Smokehouse Maple Seasoning on both sides. In a skillet, I melt butter and add garlic. Once the butter is melted I add in my pork chops. I cook them on medium heat for about 3 minutes on each side. I reduced the heat and let them cook on low while I make sides and additions needed for the meal. Once everything is ready, I check to make sure they are cooked through and topped with honey.


Sweet Potato Side

Two large Sweet Potatoes

Butter

Brown Sugar

Pecans


I start by puncturing the sweet potatoes with a knife. I make several holes in the potatoes. I place them on a microwave-safe plate and heat them for five minutes in the microwave. After the five minutes, I flip them over and microwave them for an additional five minutes. If the insides of the potato are still hard heat additional 3 minutes. Once the potatoes are soft, cut them open and remove the insides with a spoon. Using a small casserole dish, add potatoes, butter, brown sugar, and pecans. Place in oven for 7 minutes at 350°.



Mac and Cheese Side

Kraft Macaroni and cheese


I just cook as directed on the box. If you are reheating Mac and cheese (as I am in the video) add in a bit of butter and milk to make the Mac and cheese taste fresh.



Pork Tenderloin

This is a super easy crockpot meal. Perfect for Sunday meals.


Pork Tenderloin (Slow Roasted Goldern Rotisserie Flavor is the one I used)

Bag of Carrots

Bag of Small Potatoes

1 can Beef Broth

1/4 Cup Brown Gravy

Salt and Pepper to taste


I just put all ingredients into the crockpot. You can do high for 4 hours or low for 8 hours.


Chicken Tacos

This was my first time making this meal and it's going to be on repeat. My husband's aunt was telling me about a recipe similar. I wanted to try it but I didn't have all the ingredients on hand so I made my twist to it. This is yummy on a tortilla shell or with chips. It's even yummy reheated.


Three Boneless Skinless Chicken Breast

3 Small Tomatoes

1/2 Purple Onion

1/2 Bell Pepper

Cilantro

1/4 Cup Taco Seasoning

8 oz Cream Cheese

Salt and Pepper to taste

1/2 Stick of Butter


I start by chopping my tomatoes, onion, and pepper. I put those ingredients in a small bowl and add cilantro. I place the chicken into the crockpot. I top with taco seasoning, cream cheese, salt, pepper, and butter, and add the small bowls of the first ingredients. Cook on high for 4 hours or low for 8 hours.
