Healthier Pumpkin Bar




These pumpkin bars are so good. My daughter and I ate them so quickly. I love them with my morning coffee. These are the perfect dessert to welcome fall.


I originally was trying to make pumpkin cookies from a recipe I found on Pinterest. I realize halfway through that I didn't have all the ingredients on hand. I had already begun mixing ingredients. So I mixed up a few different things and created these bars. It was a delicious mistake. I often make mistakes while cooking. Sometimes it works out well for me, sometimes it doesn't.


I say these pumpkin bars are healthier but that doesn't mean they are a beneficial healthy snack. It just means I have used a healthier alternative. It's still a dessert and should be eaten as if its a dessert

Ingredients

Order ingredients from Amazon

  • Almond flour- A lot of people don't prefer the texture of almond flour. The texture works well with this recipe. Click here.

  • Splenda Brown Sugar- Splenda brown sugar is the perfect substitute for regular brown sugar. The taste is about the same. Click here.

  • Eggs- If you are using fresh eggs, use large eggs similar in size.

  • Baking Powder- This is going to help your bars be light and fluffy. Click here.

  • Salt- Don't forget your salt. it brings out the chocolate flavor. Click here.

  • Pumpkin Pie Spice- Make sure you are using pumpkin pie not just pumpkin. This spice is so good, I love putting it in my pancake matter. Perfect for fall. Click here.

  • Cinnamon- The cinnamon and pumpkin pie spices are a perfect mix. Click here.

  • Vanilla- Just a dash of vanilla probably about two teaspoons. Click here.

  • Butter- Margarine, it's better for your heart compared to butter.

  • Sugar-Free Chocolate Chips- Anything I bake, cookies, chocolate chip pecan pie, chocolate chip brownies, est. I always use milk-chocolate chocolate chips. Click here.

  • Pecans- Pecans are optional. If you don't like pecans, substitute them for a nut of choice. I think the nut takes the bars to the next level. Click here.

Let's Get Baking





  • 1 Cup Almond flour

  • 1 Cup Splenda Brown Sugar

  • 2 Eggs

  • 1 Tsp Baking Powder

  • 1/2 Tsp Salt

  • 1 1/2 Tsp Pumpkin Spice

  • 1/2 Tsp Cinnamon

  • Dash of Vanilla

  • 3 Tsp Butter

  • 1/2 Cup Sugar-Free Chocolate Chips

  • Pecans (Optional)


Pre-heat oven to 350° . Mix all your ingredients except for the chocolate chips and pecans. Once you have your ingredients well-combined fold in your chocolate chips and your pecans. Spray a 8x8 pan with cooking spray to keep bars from sticking. Bake for about 15 minutes.
